Networked Canon Printers - Default to Black and White

I am running a windows network and I have two Canon Printers - I need to change the default settings on both printers to default to black and white.

I've checked the printers and I can change the default on the server but that does not propagate down to the users.

Canon Image Runner C5240
Canon iR C2550

I've searched, gone through every setting on the printer and the admin page - and nothing..

Any help would be appreciated..
