Print driver not saving color preferences

I have a Windows 7 client that is using a Konica-Minolta Bizhub C360 copier that my company installed and supports. This is a local driver install and there is no print server. The user is a member of the Administrators group locally and should from what I can tell have full permissions.

They called about defaulting the print driver to B&W. I connected to assist remotely and found that after I change the setting and click Apply, it goes back to Auto Color upon re-opening the Printing Preferences.

I checked the Security tab, and Everyone was just allowed Print, and they were neither allowed or denied 'Manage Printers'. So I allowed Everyone 'Manage Printers', closed the window, and tried again to the same results. No go.

I also checked the Security tab in the Print Server Properties window, but her account was only able to view and not edit the permissions. 'Everyone' was again neither allowed or deny Manage Printers, but I could not click on 'Add' to change the setting (to be honest I am not even sure there was an 'Add' button, but I see one on my laptop and I am a local Admin as well). The Administrators group should have full control of everything relating to the printers so I'm not sure exactly what is going on here.

Does anybody have any ideas? Everyone looks to me for answers on stuff like this and I honestly haven't run into this before.
