Network Scanning Officejet HP 6700

Hi Friends,

We have a user in our office that would like to be able to scan to their HP Officejet 6700 from their computer.  We push all printer drivers with Windows Server 2008 R2.  We would prefer not to install the cumbersome HP software on the local machine so that the user can scan directly to their computer.  

Ultimately, we would like to scan documents into Adobe Professional.  Is there a way to access the scanner without installing the marvelous HP Print Center?  Is there a solution that allows us to manage the configuration from Windows Server 2008 R2?  Is there a driver that supports the HP scanner feature?  

Any help would be greatly appreciated.
